Cut the cooked ham into small pieces, leaving aside two whole slices that you will use at the end. Cook the chopped ham in a pan with a little olive oil and pine nuts.
Whip the eggs, season to taste with salt and stir together with cooked ham and pine nuts. Grease the pan with oil, , put it on the stove and pour the mixture in it.
Cook the omelette on one side, then turn it and cook the other side. In the meanwhile lay over the already cooked side 2 slices of Prosciutto Cotto Terra del Gusto. Once cooked, fold it back on itself so as to leave the cooked ham in the middle and serve hot.
