Whisk together all the ingredients for the pancakes, until the mixture is smooth and pour 3 spoons in a nonstick frying pan previously greased. Cook a couple of minutes from both sides. Follow this way with all the pancakes.
Place on top of each pancake a slice of scamorza and one of speck, close in fan-shaped and lay them in a buttered baking tray.
Cover with bĂ©chamel and parmesan cheese
Bake at 180 degrees for 15/20 minutes, until the surface becomes golden.
